Contemporary Issues in Science: Bread 101

Bread is a complex medium, looking nothing like the original seed of grain from which it originates.  Yet when we mix a few simple ingredients we are able to induce a transformation that results in an edible, highly nourishing, staple food product crucial for sustenance in many cultures.  In Bread 101, you will explore the energy requirements, biomedical and biochemical aspects, and local and sociopolitical context of bread production.

Tropical Disease: Ghana

Ghana experiences many of the same infectious diseases found elsewhere in sub-Saharan Africa and other tropical regions of the world. These include well-known diseases such as malaria, as well as the so-called ‘neglected tropical diseases’ that are marked by high morbidity but low mortality. This course focuses on infectious and parasitic diseases present in Ghana and will explore aspects of epidemiology; disease progression and pathology; challenges in disease control or eradication; and, as relevant, historical context. Course material accommodates students from all majors.

Marine Biology in Panama

An intensive field course in Panama focused on tropical coastal biology and environmental issues. The course will integrate biology of 3 distinctive coastal habitats/biomes (coral reefs, mangroves, and seagrass meadows) and consider relevant human environmental issues on global and local scales. The course will be offered in Panama at the Smithsonian Tropical Research Institute’s (STRI’s) Bocas Research Station (BRS), located on Isla Colon along the northwestern Caribbean coast of that country. All of these habitats are abundantly present within minutes to ½ hour boat ride.
